Coffee, explained from seed to cup.
No jargon walls. Just the things that actually change what's in your cup: what "specialty" means, where coffee came from, the varieties and their family tree, how the cherry is processed, what the roast does, and how the brew method shapes the final cup. Read straight through, or jump to a topic.
What "specialty coffee" actually means
"Specialty" isn't a marketing word; it's a quality grade. Trained graders taste a coffee through a standard protocol called cupping and score it out of 100. A coffee that scores 80 or above, with no defects, earns the specialty grade. Below that, it's commodity coffee.
The score is just shorthand. What it really measures is whether a coffee is clean (free of defects) and distinctive (it tastes like somewhere). Everything that follows (variety, processing, roast, origin) is how that distinctiveness gets built.
A brief history of coffee
Every coffee in your cup traces back to the forests of Ethiopia, through a remarkable chain of single plants, smuggled seeds, and botanical gardens that carried it around the world in roughly three centuries. Here's the short version.

Like wine grapes or apple cultivars, Arabica comes in distinct varieties. Genetics set the ceiling: a variety's lineage influences its flavor tendencies, how it grows, and how well it resists disease, which is why the same farm can taste completely different from one variety to the next. Explore the family below.
Processing methods
A coffee "bean" is the seed of a cherry. How much of that fruit is left on the seed while it dries, and for how long, is one of the biggest flavor decisions made before the coffee ever reaches us.
- What happens
- The skin and pulp are stripped off and the sticky mucilage is fermented and rinsed away. The seed dries clean, in just its parchment.
- In the cup
- Clean and transparent. You taste the variety and the place — bright acidity, clear flavors, lighter body. Our Honduras is washed.
- What happens
- The whole cherry dries intact in the sun, fruit and all. The seed slowly absorbs sugars and aromatics from the drying fruit around it.
- In the cup
- Heavier, sweeter, and fruit-forward — berry, jammy notes, wine-like depth. Bigger body, softer acidity.
- What happens
- The skin is removed but some of the sweet mucilage is left on the seed to dry — a middle path between washed and natural.
- In the cup
- Round and syrupy. Keeps washed-like clarity but adds honeyed sweetness and a fuller body.
Roasting
Green coffee tastes like grass. Roasting is where flavor is built, through the Maillard reaction (sugars and proteins browning, the same reaction as toast and seared meat) and caramelization (sugars breaking down). How far you take it trades acidity for body.
Light
Stopped soon after first crack. Maximum origin character and acidity, delicate body. Shows off a distinctive variety or process. We roast the Honduras medium-light, just on the bright side of here.
Medium
Acidity and body in balance, sweetness fully developed by caramelization. The most versatile range.
Dark
Taken further still. Roast flavors — cocoa, smoke, bittersweetness — dominate origin character. Heaviest body, lowest acidity.

Bean temperature · ~12 minutes in the drumA roast isn't a single setting; it's a path. The roaster charges cold beans into a hot drum, watches the temperature dip and climb, and chooses where to stop. The same green coffee can become any of the three cups above depending on the shape of this line.
After the charge, bean temperature dips to a "turning point," then climbs as moisture boils off. The bean goes green → yellow and smells grassy, then bready. No flavor is built yet; this stage just sets up the ones that follow.
Sugars and amino acids brown together (the Maillard reaction) while sugars caramelize. This is where nutty, toasty, chocolate and caramel aromas are actually created, and the bean darkens toward brown.
The window between first crack and the drop. Its length sets the roast level: a short development keeps acidity and origin clarity; a longer one trades them for body, sweetness and roast tone. Push to second crack and you're in dark-roast, oily territory.
Freshly roasted coffee is still releasing carbon dioxide, a process called degassing. Too much CO₂ disrupts even extraction and makes brewing unpredictable. We let beans rest about seven days after roast before they hit their stride, which is why we roast to order rather than stockpile.
Countries & regions of origin
Coffee grows in a band around the equator, the "coffee belt," roughly 23.5° north to south. Within it, altitude, climate, soil, and local processing tradition give each region a signature. Higher and cooler generally means denser beans, brighter acidity, and more complexity.
Coffee grows almost entirely within the Bean Belt, the tropical band between the Tropics of Cancer and Capricorn (shaded above), where altitude, steady warmth, and a dry season let Arabica ripen slowly. Honduran highlands
Cool nights and high volcanic ground slow ripening and concentrate sugar. Clean, sweet, chocolate-and-caramel cups — the home of our current lot.
Ethiopia
Where Arabica is from. Thousands of wild "heirloom" landraces give floral, citrusy, tea-like cups found nowhere else on earth.
Colombian altitude
Steep, high Andean farms and two harvests a year. Balanced, sweet, dependably clean — caramel, red fruit, gentle acidity.
Brew methods & what they do
Same beans, same grind, same roast, and yet an espresso and a cold brew taste like different drinks. The brewer decides how water meets coffee: how hot, how long, under how much pressure, and through what filter. Those four levers reshape body, acidity and clarity in the cup. Here are the five you'll meet most.
Fresh water flows down through a bed of grounds and out the bottom. Even extraction, and a paper filter catches oils and fines: the cleanest, most articulate cup.
Coffee sits fully submerged for minutes (or hours), then is filtered or pressed off. Gentle and forgiving, with a fuller, rounder body.
Pressure drives hot water through tightly packed grounds in seconds. Concentrated, syrupy and intense: espresso and its stovetop cousins.
Concentrated and syrupy, capped with crema. Nine bars of pressure pull out intense aromatics and a heavy body, with acidity sharpened to a point. The base for every milk drink, and a small serving, so less caffeine than it tastes.
The clarity method. A paper filter traps oils and fines, so florals, bright acidity and origin character come through crisp and tea-like. Light, articulate body, and the best way to taste a distinctive lot.
Full immersion through a metal mesh that lets oils and fine sediment stay in the cup. Heavy, rounded body and a rich, textured mouthfeel. Mutes brightness and forgives almost any mistake.
A long, cold steep extracts sugars but very few acids. Exceptionally smooth and sweet, chocolatey, with almost no brightness or bitterness. The strong ratio and long contact make it the most caffeinated pour here.
Automated drip through a paper or mesh basket. Balanced and consistent, the everyday pot. Cleaner than immersion, with a little more body than a careful hand pour-over. Hard to beat for volume.
