From the back of the bag

Grown in the western highlands of Honduras around Pacavita, this certified-organic, SHG/EP lot comes from farms ringed by biological reserves: Reserva Biológica de Opalaca and Reserva Biológica Volcán Pacavita. A rainy growing season gives plump cherries, and a clear, warm dry season lets producers sun-dry the coffee after washing; high altitude, rich clay soil, and cool nights keep the ripening slow and even.

It’s a blend of Lempira, Caturra, Catuai, and IHCAFE 90 from two growers. Silvestre Vasquez, always chasing higher ground near Pico Congolón, and Joel Lopez, a fourth-generation farmer whose family has worked Los Lesquines since 1865. Harvest runs December through March.

We roast it medium to keep the sugars round and the acidity soft: dried cherry and brown sugar up front, settling into a clean cocoa finish. It drinks easy black, and it’s forgiving across pour-over, drip, and press.
